I am so glad to hear from you. I hope you and your family are doing well. Yes, I have lots of recipes. I have a few sites with recipes to check out and I will include links to my favorite recipes.

Recipes:
Breakfast cookies Easy to make and so good. I use regular peanut butter.
Banana oatmeal Really any type of oatmeal is good.
Favorite Recipes:
Cauliflower tacos I use vegan mayo.
Buddha bowls It takes time to prepare but makes enough lunches for a few days
Garlic Mushroom Cauliflower bowls Add Chickpeas for a little more protein
Chickpea Caesar Wrap I used pitas instead wraps.
Sweet Potato Kale Salad Love this Salad!!!! So good!
Mushroom Spagetti Aglio Olio Quick and so good!!!! I use vegan parmesan cheese.
Mexican Quinoa Quick and so good- add vegan cheese too.
Quinoa stuffed peppers Same idea in peppers
Pad Thai So good!
Frozen burritos Great for freezing and reheating in a pinch.
Chickpea Curry Serve with Naan (Naan may not be vegan)
Also, If you are in a pinch for time, try mixing Trader Joe’s Vegan tzatziki dip with chickpeas for a pita sandwich. I add cucumber slices and red onion for Alex.

Chickpea Salad Quick and easy- only lasts two days at most
I have more recipes from cooking books too, but this is a good start. We buy Chickpeas and black beans along with veggies in bulk. We always have a bowl of fruit also available to avoid snacking on bad foods (it works for Alex- I am still working on this!).
For a lot of these recipes, you can use what you like best especially when it comes to beans and certain veggies. I do a lot of prep on the weekend to have meals available during the week and always have pasta night. Pesto is great for plant-based recipes.
